Pomegranates are loaded with health Benefits. This ruby red fruit contains important nutrients, including antioxidants. In additional, they also have anti-inflammatory properties. As a result, they are thought to lower your risk for diseases such as certain cancers and heart disease. Additionally, they have been shown to be beneficial against some types of bacterial infections and may be used to help fight arthritis and lower blood pressure. Check out the nutrient profile found in just one cup of pomegranate seeds:

  • Fiber: 7 grams.
  • Protein: 3 grams.
  • Vitamin C: 30% of the RDA.
  • Vitamin K: 36% of the RDA.
  • Folate: 16% of the RDA.
  • Potassium: 12% of the RDA.

Pretty impressive if you ask me. Typically we open up the pomegranates and eat the seeds, but when my husband brought home a large box of them I was excited to get my juicer out and make some pomegranate cordial!

Ingredients
  1. 2 Cups Pomegranate Juice
  2. 2 Cups Water
  3. Juice of 1 Orange
  4. 2 Packets of Stevia**
Instructions
  1. You can purchase pre-made pomegranate juice, however, it's really simple to make your own.
  2. To make your own juice, roll the pomegranate on the counter firmly with the palm of your hand. This releases the seeds and makes it easier to remove them.
  3. Next, cut open the fruit and extract the seeds into a bowl.
  4. Process the seeds in a juicer.
  5. Once you have 2 cups of juice (8-10 pomegranates), pour into to a pot on medium heat along with the water and stevia.**
  6. After the juice has simmered for 10 minutes add the orange juice and stir.
  7. Let liquids cool, then transport to a glass bottle and store in the refrigerator.
Notes
  1. In order to retain the healthy benefits of the pomegranate I make my cordial with stevia instead of sugar **1 1/2 Cups of Sugar can also be used in place of stevia. Coconut sugar can replace regular sugar, however your drink may turn a darker color.
