This recipe came about when I needed to use up some ripe bananas and searched online for Paleo banana bread recipes. I finally found a recipe that used only 2 eggs (which was all I had on hand)  and so I began dumping ingredients into my mixer…then I realized that instead of the required 3 cups of almond flour, I was down to ONE! So I improvised by adding other alternate flours and balancing out wet ingredients and the results were AMAZING!!! Note: This banana bread will taste even more fabulous when you use homemade vanilla using the recipe I shared here.

Ingredients
  1. 2 eggs
  2. 3 very ripe bananas
  3. 1/4 cup honey
  4. 1 teaspoon lemon juice
  5. 1 1/2 cups almond flour
  6. 1/2 cup hazelnut flour
  7. 1 cup coconut flour
  8. 1 teaspoon baking soda
  9. 1/8 teaspoon sea salt
  10. 1 teaspoon vanilla
  11. 1/2 cup chocolate chips
Instructions
  1. Preheat oven to 325 degrees. Grease one loaf pan (I use coconut oil for this)
  2. Beat eggs in a mixer using whisk on high for 3 minutes until the eggs are lighter and frothy.
  3. Add in bananas, honey and lemon juice and mix until combined.
  4. Mix in remaining ingredients and transfer to loaf pan. Mixture will be thick.
  5. Bake for 40 minutes and test for doneness. May need to bake for 10 more minutes.
  6. Remove from oven and let cool completely before cutting.
  7. Enjoy!
